Truffles are underground mushrooms recognizable by their intense and unique smell and taste. They grow underground, most often in symbiosis with trees such as oak, hazel and hornbeam. They are especially valued in gastronomy and are considered one of the most luxurious delicacies in the world.
The white truffle (Tuber Magnatum Pico) is considered the most prized because of its strong aroma and rarer availability. It is best consumed raw, grated on a fresh dish. Black truffles (like Tuber Melanosporum and Tuber Aestivum) have a slightly milder aroma, but are versatile and can be used both fresh and cooked.
Fresh truffles are best stored in the refrigerator, wrapped in a paper towel inside an airtight container. The towel needs to be changed every day to prevent moisture build-up. Consumption within a few days is recommended for optimal taste.
