When we talk about prestige in the world of black truffles, the black fresh truffle Tuber Melanosporum stands at the very top. While the summer and autumn varieties are appreciated for their subtlety, the noble winter truffle brings an intensity that transforms the entire kitchen. Its black-purple flesh, dotted with extremely thin and thick white veins, is proof of maturity and top quality, which is only achieved under the influence of the cold Istrian winter temperatures.
- Superior aroma profile: A complex fragrance that combines notes of dark chocolate, licorice and forest floor. Its aroma is persistent and develops in layers.
- Heat resistance: In contrast to the white truffle, which is exclusively for the final grating, the black winter truffle is a “kitchen worker”. It releases its charms best when slightly warmed, which makes it perfect for fillings, terrines and complex sauces.
- Seasonal exclusivity: Harvested in the coldest part of the year (December – March), when the concentration of aromatic compounds in the tuber is at its peak.
- Istrian origin: Our truffles come from a symbiosis with Istrian oak and hornbeam, which gives them a specific balance of minerality and sweetness.
- Infusions and bases: Due to its stability, it is ideal for the preparation of flavored butters, bases for béchamel or for “inserting” under the skin of poultry before roasting.
