My grandmother would then, with the precision of a surgeon, roll out thin dough for ravioli, while my grandfather would place a basket of treasures that he and our dogs had just brought from the Motovun Forest on the wooden table.

Pasta in Istria has always been a canvas on which truffles paint their most beautiful flavors. While fuži and pljukanci are fantastic, ravioli offer an additional dimension – a surprise inside. The secret to top-notch ravioli and truffle combinations lies in balance. The ravioli filling (usually made of light cow’s cheese, cottage cheese or tender meat) serves as a delicate base that must not overpower the aroma of the truffle, but rather highlight it.

They are only rubbed onto ready-made, warm ravioli so that their volatile aromas are released under the influence of heat.
Black truffle
Whether it is a summer or a noble winter black truffle, it is incredibly grateful for cooking. Black truffles have a milder, nuttier note. They work great within the ravioli filling itself or slightly warmed in butter just before serving. Their texture is slightly firmer, and their flavor perfectly complements richer fillings such as those with boškarin meat.
How to prepare ravioli with truffles

Dough: Use home-made eggs with a strong yellow yolk and sharp flour. The dough must be thin, but firm enough to hold the richness of the filling.
Filling: Fresh Istrian cottage cheese or mild cow’s cheese is best. If you want extra depth, you can mix a teaspoon of our tartufate into the filling.
Sauce: Forget about heavy cream for cooking. Real ravioli with truffles only requires an emulsion of quality butter, a little water in which the pasta was cooked and a few drops of olive oil.
Finish: At the very end, grate a fresh truffle over the warm ravioli. That smell that rises from the plate is the reason why we have been involved in truffle farming for three generations.
