White truffle (Tuber magnatum Pico): The king without a throne
If truffle farming is a religion, then the white truffle is its deity. Known by its Latin name Tuber magnatum Pico, this truffle is the most prized and expensive mushroom in the world. Its season in Istria is short – from September to January – and this is precisely the time when the greatest euphoria is felt in the heart of Istria.
Flavor and aroma profile
The aroma of the white truffle is penetrating, intense and complex. It is reminiscent of garlic, aged cheese, damp earth and even a faint trace of honey. Its taste is not as pronounced as its aroma; it acts through the nose, creating an explosion in the mouth only when it combines with warm fat such as butter.
How to use it in the kitchen?
The golden rule of the Bartolić family is: The white truffle is never cooked. Heat destroys its delicate aroma. It is grated at the very end, on the finished dish.
Ideal partners: Hot fuži, pljukanci, eggs on the eye or creamy risotto.
Tip: Rub it into thin flakes just before consumption so that the scent is released the moment it touches the hot dish.
Black truffle: Strength that lasts all year round
Unlike its capricious white brother, the black truffle is more stable, robust and available throughout most of the year. There are several types, from the noble black truffle to the summer truffle (Tuber aestivum), which delights us during the warm months.
Flavor and aroma profile
Its aroma is milder, more reminiscent of nuts, chocolate and wild mushrooms. While the white truffle is an “assault” on the senses, the black is a subtle upgrade. Its texture is firmer, and the flavor is much more persistent.
How to use it in the kitchen?
Unlike the white, the black truffle tolerates heat treatment. In fact, a short cooking in butter or oil helps it release its aromas.
Ideal partners: Meat dishes, game, pâtés and even desserts (black truffle and dark chocolate are a dream combination).

Differences in price and storage
We are often asked why the white truffle is so much more expensive. The answer lies in the fact that it is impossible to cultivate it. It is completely wild and grows only in the specific conditions that Istria offers. The black truffle is somewhat more common, which makes it more accessible for everyday use in the kitchen.
How to store them?
Both types of truffles are living beings. They breathe and lose weight every hour.
Wrap them in a paper towel.
Place in a glass container.
Store in the refrigerator, but use them within a few days (white) or a week (black).
Istrian truffle trick: Place a couple of fresh eggs in a container with truffles. The eggshell is porous and will absorb the aroma – the next day you will have the best scrambled eggs in the world even before you grate the truffle itself.
