Recipe: Cod fillet in the embrace of black truffle
The preparation of this dish does not require complicated techniques, but rather respect for the food. In Istria, we like food to remain “clean”.
Ingredients (for 2 people):
400 g fresh cod fillet
30-40 g fresh black truffle
Homemade olive oil (we recommend our truffle-flavored oil)
A little butter
Homemade salt and white pepper
Creamy mashed potatoes or celery root as a base
Preparation:
Fish: Dry the cod fillet with a paper towel. Salt it very lightly, as the truffle brings its own saltiness. Fry it briefly in a pan with a little olive oil, only 3-4 minutes on each side, so that the inside remains juicy and “glassy”.
Sauce: Melt a piece of butter with a few drops of olive oil in a small bowl. Grate a small piece of black truffle into it to release its aroma into the fat.
Pairing: Place the cod fillet on a warm base of puree. Pour over the butter and truffle emulsion.
Finishing: Just before serving, grate the remaining black truffle into flakes directly onto the fish. The warmth of the cod will activate the remaining aromas, and you will feel why this combination is legendary.
