While the rest of Istria was still sleeping in the thick fog of the Mirna Valley, my grandfather would return from an early morning hunt. His boots would be muddy, but his smile would be wide, and from his bag would spread that specific, intense smell that is unforgettable. That earthy smell of freshly extracted treasure was a sign that it was time for breakfast, which in our Bartolić family is valued more than any formal lunch.

The cast-iron pan would already be on the fire, a knob of homemade butter would start to sizzle, and grandma would carefully crack eggs. But it was only when those golden yolks were covered in a “snow” of black truffles that the kitchen would truly come to life. Today, as a truffle expert, I want to show you how poached eggs and truffles create a combination that goes beyond an ordinary meal. It is the pure essence of Istria on a plate, accessible to anyone who appreciates top-quality food.

Why are fried eggs and truffles a perfect pair?

You might be wondering why anyone would waste a noble mushroom on such an ordinary dish. The answer lies in the fat. The egg, or rather its yolk, is a natural flavor enhancer. The fat in the yolk perfectly absorbs and transmits the volatile aromatic compounds released by the black truffle.

In the world of haute gastronomy, it is often said that the egg is the best “ambassador” for the truffle. While some more complex sauces might drown out the subtle notes of hazelnut and forest soil, the eggs let the truffle take center stage.

Recipe for Perfect Truffle-Infused Eggs

Although it sounds simple, there are a few tricks we’ve been perfecting for decades to make this breakfast (or quick dinner) worthy of the best Istrian taverns.

Ingredients:
2 homemade eggs (the fresher the better)
10-15 g fresh black truffle
A little butter or a few drops of olive oil (we recommend our truffle-flavored oil)
A pinch of coarse sea salt and freshly ground pepper
Preparation:
Aroma trick: If you have fresh truffles the day before, seal them in a jar with the eggs in the refrigerator. The egg shell is porous and the yolk will absorb the truffle flavor even before you break the egg.
Baking: Gently heat the butter in a pan. Break the eggs carefully so that the yolk remains whole. Bake them over moderate heat – the white must be cooked, but the yolk must remain runny.
Adding the truffles: This is where many people make the mistake. Finely grate some of the black truffles directly into the pan just before the eggs are done. The heat will help the truffles release their first flavors.

The final touch: Once the eggs have slid onto the plate, take a truffle slicer and grate the rest into thin, translucent flakes. Each sheet will melt gently in the hot yolk.

How to store and use leftover truffles?

If you didn’t use the whole truffle for your eggs, don’t worry. Wrap a fresh truffle in a paper towel, place it in a glass jar, and store it in the refrigerator. Change the paper every day to keep the truffle dry.
