Close your eyes for a moment. Imagine a morning in the interior of Istria, that moment when the fog slowly lifts from the hilltops and the damp earth beneath Motovun begins to release its intense, almost intoxicating scent. In our family’s kitchen, that scent has always been a sign that the season is in full swing. You can hear the gentle scraping of a knife on a gnarled tuber and the sound of water boiling in a large pot, ready for homemade pasta.

As part of the Bartolić family, I grew up with stories of secret locations in the Motovun Forest and dogs who are more than pets – they are our equal partners in every catch. Seven decades of tradition have taught us one thing: Istrian fuži with truffles are not just a dish. They are our history on a plate, the essence of the land we cultivate and the forest we have protected since the 1950s.

The secret of preparation: Truffles Istria recipe

Preparing perfect fuži with truffles requires minimalism. You don’t need heavy cooking cream that drowns out the aroma. A true Istrian recipe celebrates the food.

Pasta: Cook the fuži in plenty of salted water until al dente.
Sauce: Melt a piece of good butter (preferably the one with truffles) in a large pan. Add a little water in which the pasta was cooked to create an emulsion.
Assembly: Put the fuži in the pan, add a pinch of pepper and stir gently until each tube is shiny and coated with butter.
Truffle: Remove from heat. If you are using a black truffle, grate one part finely into the sauce and the rest into larger flakes on top. If you have Tuber magnatum Pico, grate it exclusively over the finished plate.
How to recognize quality?

When buying truffles or truffle products, be careful. A real truffle does not smell like chemicals. The smell must be layered, earthy and natural. In our stores we often say: “The truffle is alive”. It breathes, it changes and it demands respect. That is why in “Tartufa Istra” we use only fruits that we have located ourselves or purchased from our long-time picker collaborators.
