The Mystique of Night Hunting: More Than Just Secrecy
Many tourists who come to hunt truffles in Istria ask us if night hunting is just a marketing gimmick or an old legend. The answer is simple: night is our best ally. Although truffles are now sought during the day, the “old guard” of truffle hunters know that night brings advantages that the sun simply cannot offer.
1. Concentration of scent in cold air
A truffle, whether it is a noble white truffle (Tuber magnatum Pico) or an aromatic black truffle, emits specific gases that penetrate the soil. During the day, the sun heats the ground and causes warm air to flow upwards, which can disperse the scent. At night, when the ground cools, the moisture remains low, and the scent becomes “heavier” and more concentrated. Our dogs then have a much easier job because the scent leads them directly to their destination like an invisible thread.
2. Silence and focus of the dog
It can be noisy in the depths of the Motovun forest during the day. The rustling of leaves, the distant sounds of tractors or other hunters can distract a dog. At night, there is absolute silence. The dog then enters a zone of complete focus. All you hear is his rapid breathing as he sniffs the ground and the quiet scratching of his paws. It is a moment of pure synchronicity between man and animal.

White vs. Black Truffle: When does darkness become decisive?
Although black truffles can be successfully hunted all year round, white truffle season (September to January) is when nighttime expeditions become the rule, not the exception.
White truffle (Tuber magnatum Pico): It is the king. It grows deeper, its scent is more penetrating, but also more volatile. The coolness of the night preserves that delicate aroma as we pull it out of the ground.
Humidity and fog: Autumn fogs in the Mirna Valley provide ideal humidity. Dry soil “locks in” the scent, while moist soil “releases” it.
What actually happens in the heart of the forest?
Many imagine night hunting as a romantic walk, but it is hard work. You walk with a headlamp, watching every step so as not to step on a creak or mud. The dogs are let loose, but under constant supervision.
When the dog marks the spot, time stops. We kneel in the mud, calm the dog and slowly begin to dig. It is in that darkness, under a narrow beam of light, that first glimpse of the ochre-yellow surface of a white truffle triggers the same adrenaline that my grandfather felt 70 years ago. This is the secret of hunting that no technology can replace.
